Our Chef de Cuisine focuses on sourcing organic and local ingredients, including honey and vegetables from the hotel’s 20th floor rooftop garden. We work with other hotels in the area to ensure all our food and beverage is purchased in bulk from a centralized location, which helps to reduce transportation emissions.

Our signature cocktail, The Peacock, includes house-infused cranberry vodka, apricot brandy and house-made lemon sour to create a unique, refreshing flavor. Other notable offerings include the ’1860 Manhattan’ made with a hand-selected single cask bourbon from Kentucky and original Waldorf Astoria creation, the ‘Robert Burns’, deliciously modified for today’s palate.
