At Peacock Alley, our Chef de Cuisine puts a firm emphasis on using locally sourced and organic ingredients wherever possible. Steps taken include foraging on the hotel grounds, including harvesting our own honey. Our signature cocktail, The Peacock, includes house-infused cranberry vodka, apricot brandy and house-made lemon sour to create a unique, refreshing flavor. Other notable offerings include the ’1860 Manhattan’ made with a hand-selected single cask bourbon from Kentucky and original Waldorf Astoria creation, the ‘Robert Burns’, deliciously modified for today’s palate.
